This dish is perfect for dinner, and even better for breakfast! As long as you have time to let it bake in the oven (about 50 minutes), you're set!
You'll need:
– 4 whole eggs
– 2 egg whites
– 3/4 cup plain nonfat Greek yogurt
– 1/4 cup loosely packed, finely shredded cheddar or Swiss cheese
– 1-1/2 cup cooked veggies, drained of any liquids
I like using broccoli, mushrooms, spinach, etc.
– Salt & pepper to taste
1.) Whisk the first three ingredients in a bowl until combined.
2.) Mix in the cheese, vegetables, and salt and pepper.
3.) Pour the mixture into a greased casserole or pie dish (I use olive oil) and bake for 45-50 minutes, or until set…not jiggly 😉
