YUM!!! I love these brownies because they're easy to make, gluten free, dairy free, and decadent. They're loaded with antioxidants from cocoa and fiber from the nuts and dates. I wouldn't go overboard and say these are a “super food”, but they're close to it!
Brownie Ingredients:
2 1/2 cups pitted dates
1 1/2 cups cashews (substitute walnuts or almonds if needed)
1/2 cup cocoa powder
1 1/2 tsp vanilla extract
2 tsp water
1/4 tsp + 1/8 tsp salt
Icing Ingredients:
1/2 cup cocoa powder
1/4 cup maple syrup
4 Tbsp melted coconut oil
1/2 tsp vanilla extract
Combine the brownie ingredients in a food processor and process for 2 minutes, until the mixture is completely smooth. It may seem a bit dry at first, just give it time.
Grease an 8″ square pan with coconut oil.
Transfer the brownie mixture into the pan and press down with a wooden spoon to flatten out evenly.
Whisk the icing ingredients together until combined. Pour the icing over the brownies and let it set in the refrigerator for at least 1 hour.
Store leftovers in the refrigerator or freezer.
