What’s for lunch?

Maybe it's just me, but I always plan out my meals. I don't like to wait until the last minute, and I always try to bring my own lunch to work. On the other hand, I get pretty tired of sandwiches, and salads aren't always an option. What to do? When this happens, I look through my pantry and freezer.

Today I found quinoa and frozen broccoli. SO I cooked the quinoa and thought to add toasted slivered almonds for some change of texture. I also put in some balsamic vinegar and chopped up broccoli. Mmm there's lunch!

It took less than 10 minutes of prep time, and I was able to get other things done while the quinoa was cooking. Sweet deal! My lunch also happens to be very low in fat and sodium, and has a nice amount of protein & fiber as well as other vitamins and minerals. I'll just put it in a container for work tomorrow along with some fruit and water.

Who says healthy can't taste good?/is expensive?/takes extra time?
