Some more things to do with spinach

Spinach Frittata

You will need:

2 teaspoons of olive oil

1 red bell pepper, diced

5 oz spinach

4 eggs, beaten

Pinch of salt

Parmesan cheese (optional)

In a medium skillet, heat the oil on medium heat. Add the pepper when the oil is warm and let cook for 5 minutes. Add the spinach and salt and let cook for 2 more minutes. Pour in the eggs, and cover the pan for 5 minutes, or until eggs are no longer runny. Turn the frittata over, and let cook for 2 more minutes. Season with parmesan cheese, if using.

Serves 2

A Side of Spinach

You will need:

1 teaspoon butter

2 teaspoons plain bread crumbs

1 tablespoon olive oil

2 cloves of garlic, crushed

10 oz spinach, chopped

Pinch of salt

Heat the butter in a small pan on low. Add breadcrumbs and cook until golden brown. Set aside.

Heat the oil and garlic in a medium pan for 1 minute on low. Add spinach, salt, and breadcrumbs. Stir until combined, and heated through.

Serves 2
