Not your ordinary salad

I usually get some kind of greens in my vegetable box each week. There is almost always parsley, cilantro, and dill, but this week I was happy to see some arugula too! I knew I wanted to make a salad with the arugula, but I didn't have any plans for the herbs I had. So what did I do? I put the whole bunch of parsley and dill in my salad as well! Then I dressed it with the usual vinaigrette concoction, and there was half of my dinner. Oh, and it tasted great!

If you've been reading my blogs, you might remember how full herbs like parsley are of vitamins and minerals. And besides–they're greens!Ā  Salads are a great way to mix up the different greens you eat, and why not add in fruit too? Sliced fresh fruit are awesome as well as berries. Don't let your salad be boring! I'm sure you at least have some nuts or dried fruit to add! How about citrus zest?

And as for that bottled dressing you're using….is it really all that it can be? Is it loaded with salt or fat? How about expensive? Loaded with ingredients your grandparents have never heard before? We'll fix that…..
