Summer Fun Bean Salad

This salad is not only colorful, but DELICIOUS and healthy! Kids love the bright flavors and textures, and parents love how convenient it is to both make and eat! What are you waiting for?!

Ingredients:

  • 2 cans beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 3 scallions, chopped
  • 1/4 cup cilantro, chopped
  • 1 (orange) bell pepper, chopped
  • 1 pint cherry tomatoes, cut into quarters
  • juice of 2 limes

Mix all ingredients in a large bowl and enjoy!

This salad tastes even better after resting in the refrigerator for a few hours–I love it for lunch, or use it as a side dish at a barbecue, the beach, or at work. It is packed with fiber, protein, and antioxidants.
